These Strawberry Chia Overnight Oats with homemade chia seed jam are easily made in just minutes the night before giving you a delicious healthy breakfast to enjoy as soon as you wake up!
Starting my mornings off with a delicious healthy breakfast is SO important yet finding the time to actually make something worth enjoying before running out the door can be tough. That’s why I LOVE making overnight oats! I can literally throw everything together in just 5 minutes the night before then wake up the next day, add my favorite toppings and I’m all set! Quick, easy and no clean up necessary. Now that’s my kind of breakfast!
Overnight oats have this magical ability of soaking up whatever liquid you choose to use making them super flavorful and ridiculously creamy. That’s why I used Silk’s NEW Protein Nutmilk! Not only are there 10 grams of protein in every serving, but this nut milk is extra creamy making it the perfect addition for these overnight oats!
Silk Protein Nutmilk is made from a delicious blend of almond and cashew milk with a great source of plant-based protein from 100% peas. It’s also dairy-free, lactose-free, gluten-free and soy-free with zero saturated fat and 80% less sugar than dairy milk so you know you can feel good about this product! For this particular recipe I used the creamy vanilla flavor, but this nut milk would also taste delicious over cereal, in smoothies, or even on its own in a glass!
I also highly recommend using delicious Silk Protein Nutmilk as a dairy-free coffee creamer because of how thick and creamy it is! Trust me you’ll thank me later on this one.
Now I must say my favorite part about this recipe was this homemade strawberry chia seed jam that I mixed in with my oats and, of course, ended up drizzling all over the top! GAME CHANGER guys. Not only did this add such a delicious sweetness to the oats, but you also get the added benefits of this amazing superfood as chia seeds are rich in fiber and protein. They also happen to create a jelly-like substance when added to liquid so making this into a jam is basically a no-brainer!
All you do is simply chop up your strawberries and heat them in a saucepan on the stove until they become syrupy. Mash them up, add a little honey or maple syrup along with your chia seeds and let everything sit until the jam starts to thicken up. SO easy! I also made this ahead of time so that I could mix some in with my overnight oats, but this jam will last up to two weeks in the fridge so spread it on toast or add it to your favorite dishes!
The other great thing about overnight oats is that there is absolutely NO COOKING involved at all. You just mix all your ingredients together the night before and wake up to a delicious breakfast! Just remember anything you add to these oats will become absorbed overnight so if you like a good crunch you’ll want to wait and mix those in right before eating. There are endless amounts of toppings that you could add to these oats, but for this recipe I sprinkled a little granola, some fresh sliced strawberries, extra chia seeds along with a dollop of that delicious jam!
Other fun toppings could include peanut butter, nuts and seeds, fresh fruit and berries, shredded coconut, bee pollen, flaxseed or even chocolate chips! As you can see the possibilities are really endless as long as you have a basic easy recipe to start with. I also like to mix in a little vanilla or cinnamon for some extra flavor and added sweetness.
These overnight oats are dairy-free, refined-sugar free and vegan (if using maple syrup in place of the honey) and made with all clean, wholesome ingredients. A perfect healthy breakfast made in just minutes the night before that you can easily grab and go the next day! Hope you all enjoy this recipe as much as I did!
- ⅓ cup rolled oats
- ½ cup Silk Protein Nutmilk
- 1 Tbsp chia seeds
- 1 tsp. honey (or maple syrup)
- ½ tsp. vanilla
- 1 Tbsp strawberry chia seed jam (see recipe below)
- 1 cup strawberries, chopped
- 1 Tbsp honey (or maple syrup)
- 1 Tbsp chia seeds
- Strawberry chia seed jam
- Sliced strawberries
- Granola
- In a jar or bowl, combine oats, nut milk, chia seeds, honey (or maple syrup if vegan), vanilla and jam, mixing well.
- Cover tightly with a lid or plastic wrap and refrigerate overnight.
- To make the jam, add chopped strawberries to a small saucepan over medium heat and stir occasionally until they become syrupy, about 5 minutes. Mash the strawberries using a potato masher or the back of your spoon and remove from heat. Add honey (or maple syrup) and chia seeds, mixing well, and let sit for about 5 minutes to thicken up.
- Top overnight oats with a dollop of jam, sliced strawberries, and granola. Enjoy!
